Bulgar
A whole grain from the Middle East, Bulgar is jam-packed with nutrition. It’s in particular a ladies’ gem! One serving of cooked Bulgar (182g) delivers 10% DV of iron (100g of beef delivers 15% DV) and 8% DV of folate which women needs more of. The same also delivers 14% DV of Magnesium and 48% DV Manganese, both important for maintaining bone density which reduces risk of osteoporosis and helps keep pre-menstrual symptoms away! The latter is also important for the production of thyroxine, a vital hormone for maintaining thyroid health. Cracked Freekah
Cracked Freekah is durum wheat harvested while it’s still green, which retains high level of nutrition. The kernels are then roasted and rubbed, giving it a smoky nutty flavour. This Mediterranean whole grain is a nutritious alternative for rice in East Asian dishes we are used to!
1/4 cup (40g) of uncooked Freekah delivers 52% DV for Manganese, 13% DV for Magnesium, 16% DV for Phosphorous giving us strong healthy bones, and 15% DV of zinc important for strong immunity. High levels of Manganese provide plenty of antioxidants, and together with Magnesium and high levels of fibre, aids to prevent heart diseases and maintaining a healthy weight.
Red & Brown Rice
With the bran and germ, the outer layers of the rice grains, intact, red and brown rice contain most of the vitamins and minerals (vitamin Bs, calcium, magnesium, potassium and fibre) in the grain, making them great for bone and heart health, and preventing diabetes.
Red rice contains anthocyanin, a powerful antioxidant that gives the rice its color, and is great for beauty and preventing cancer. Red rice is also a great source of selenium that protects the body against infections.
